Pineapple and Passionfruit Punch
Serves 20
2 cups of Strong Hot Black Tea
Quarter cup of Demerara Sugar
Three quarters of a cup of Lemon Juice
4 cups Pineapple Juice
2 tablespoons of Lime Cordial
80 fl. oz. of Lemonade
40 fl. oz. of Soda Water
425g Crushed Pineapple
Pulp of 5 Passionfruit
Crushed Ice
Shredded Fresh Mint
Orange Slices

Mixing Procedure
Combine Hot Black Tea and Sugar in a bowl, stir until Sugar is dissolved, cool, place Lemon Juice, Pineapple Juice, Lime Cordial, Lemonade, Soda Water, Crushed Pineapple, Cool Black Tea and Passionfruit Pulp into a large punch bowl, mix, add Crushed Ice, Shredded Mint and Orange Slices, serve in a highball glass.
